:: LifeHacks :: Recipe – Rice bowl

One of my favorites because it’s easy, healthy and you only need 2 pots.
You can make the vegetarian version or you can add chicken or fish as you wish.

For the vegetarian option:
1 potion Rice – vegetable stock
1/2 Zucchini
2 Carrots
2 Tomatoes
1 egg
Curry / peper
Parmesan cheese

Boil the rice in vegetable stock till done.
– You can use chicken stock for a not completely vegetarian bowl –
Cut the zucchini and carrots in small dices.
Melt butter and fry the zucchini and carrots.
Break the egg and scramble through the vegetables.
Add tomatoes and mix the vegetable/egg combination with the rice.
Season with Curry and peper.
Add the Parmesan for the final touch.

You can always add some chicken, white fish or beef to the bowl.
When I’m really into vegetables, I add peas and bell pepers for a little more color.
